A splash of this delicate basil vinaigrette dressing lets the goodness of fresh spring greens shine through. It’s also excellent drizzled over wedges of vine-ripened tomatoes!
- ¼ cup olive or vegetable oil
- 4½ teaspoons red wine vinegar or cider vinegar
- ¼ teaspoon ground mustard
- 1 tablespoon fresh basil
- ½ teaspoon fresh garlic (chopped )
- salt and pepper to taste
- Combine all ingredients in a jar. Shake well and serve over salad greens.
