Helping your Herbs Overwinter

If you were as fortunate as I was this past spring and summer, then you should still have lovely mature perennial herbs well into the fall. Herbs like oregano, thyme, sage, chives and several varieties of mint will easily over-winter here in the Maritimes.  It is important, however to remember not to harvest your herbs too hard before winter.  Leaving enough growth to sustain your plant through the cold winter months is important and leaving the newer young growth will allow the plant a much better chance of survival. Up until a killing frost, it is still not too late to harvest your perennial herbs to dry and store for the winter months. Just remember to leave enough growth.
