Freezing your herbs
Most herbs can be preserved well by freezing.
There are two ways it can be done…
The first way is to rinse herbs in cold water and shake well. Remove the large tough stem and quickly dip the leaves in olive oil to seal their flavor. Put them in plastic bags being careful not to crowd them. Freeze in a container, as not to damage or crush leaves. If they are crushed or brushed too often they will loose their essential oils.
The second method is to wash and finely chop the fresh herbs. Pack into plastic ice cube trays, fill with water, and freeze until solid. Store the herb cubes in labeled freezer bags for up to six months. You can also capture the flavors of herbs in herbal butters or vinegars.
